Baked Blueberry Pudding
| This wonderful recipe substitutes BLUEBERRIES in place of the bananas
in the traditional banana pudding. Or, you can use both types of fruit for
a tasty combination.
Preheat the oven to 350. In a large heavy saucepan or boiler combine the following ingredients and cook until thickened, stirring constantly. This will take 10-12 minutes. Pudding: Meringue: To make the meringue, beat egg whites and cream of tartar on high speed with an electric mixer until soft peaks form. Gradually beat in the sugar |
Blueberry Gingerbread Squares

2 cups all-purpose flour 1 tsp baking soda 1/2 tsp salt 1 tsp ground cinnamon 1/2 tsp ground ginger 1/4 tsp ground nutmeg |
1/2 cup oil 1 cup sugar 3 Tbsp. molasses 1 egg 1 tsp vanilla extract 1 cup buttermilk 1 cup blueberries, dredged in 1 Tbsp. flour 1 Tbsp. light brown sugar |

Preheat oven to 350 degrees. Mix the first 6 ingredients; set aside. Beat oil, sugar, molasses and egg; add vanilla. Add flour mixture to creamed mixture alternately with buttermilk; beat with each addition. By hand, stir in BLUEBERRIES. Pour mixture into a greased and floured pan. Sprinkle with brown sugar. Bake about 35-40 minutes or until a toothpick comes out clean. Serve warm. Top with whipped cream if desired. Makes 8 servings. |
Orange Blueberry Bran Muffins
| 1 cup all-bran cereal (not flakes) 1/2 cup fresh orange juice 1/2 cup light brown sugar 1/2 tsp salt Mix in a large bowl and set side 10 minutes |

1/2 cup sour cream Mix and stir into the bran mixture. |
1 cup flour Mix and stir into bran mixture until just moistened. Spoon batter equally into greased or paper-lined muffin cups. Bake at 400 degrees for 20-25 minutes. Makes 12 |
